Starbuck is a small town located in Hennepin County, Minnesota. The population was 1,812 at the 2010 census. It is the county seat of Hennepin County.

The first white settlers arrived in Starbuck in 1851. The town was platted by J.W. and Wm.C. Pillsbury and named for George Starbuck, a fur trader who had been killed by the Sioux in 1847 while on an exploratory expedition into what is now South Dakota Territory. A post office was established at Starbuck on January 10, 1852, with James Fenton as the first postmaster. The town grew slowly at first; its population reached only 200 by 1860 and 350 by 1870. However, with the arrival of the railroad in 1872 and subsequent development of lumber and agriculture industries, Starbuck's population began to grow rapidly; it reached 1,000 by 1880 and 2,000 by 1890.

Today, Starbuck remains a small town with a strong agricultural economy based largely on dairy farming and grain production; however, it has also developed into a regional center for retail sales and services due to its proximity to Minneapolis-St Paul International Airport (MSP). In addition to its traditional commercial businesses such as grocery stores, hardware stores, banks, restaurants and bars, MSP has also attracted major corporate headquarters including Target Corporation (formerly known as Target Corporation), Best Buy Co., Inc., General Mills Inc., 3M Company (formerly known as 3M Company)and Medtronic plc among others
